About Us: 

Firebrand Artisan Breads is the only wood-fired oven commercial bakery in the East Bay. We are opening our first retail bakeshop the first week of November, in the new Hive development in Uptown Oakland. It will be a showcase for our beautiful hearth loaves, luscious pastries, high-end coffee with a creative spin, and amazing sandwiches from Pal’s Takeaway in San Francisco. The bakery hours will be from 7am-7pm, seven days a week. We are looking to hire for two pastry prep positions. 

About the position: 

The ideal person for our open Shaper position is someone who has a keen eye for details, is self-motivated, and who recognizes that the next bread on her/his production line must be even more beautiful than the last. 


  • Over time you will learn and understand the baking process from beginning to end. 

  • You will be given the opportunity to work independently and, at times, with few other people in your space.  

  • Someone who does this job extremely well will be considered for apprenticeship projects in which your are asked to experiment with new recipes and raw material (scientifically documenting, testing, tasting and reporting on new products)  

Must be able to: 

  • Learn and adhere to the high standards of shaping set by Firebrand 

  • Communicate well verbally and in writing with co-workers, managers and owners 

  • Be able to make quick, accurate decisions 

  • Understand the importance of scheduling, and meeting tight deadlines 

  • Follow and develop good safety habits at all times. 

  • Work weekends and holidays, if needed: be available in general 

  • Work independently, often alone, and also as part of a team 

Primary functions of the job: 

  • Shaping baguettes, batards, boules, rolls, challah, ciabatta, pretzels, brioche, French, sourdough, German rye and many others 

  • Feed starters, maintain organization of proof box, mix rye and sometimes polish 

  • Troubleshoots potential problems with shaping or storage of bread  

  • Writing and maintaining personal schedule each day 

  • Daily communicating with manager or owner directly or by phone  

  • Placing products in trays and baking racks 

  • Maintain a clean work environment throughout the day and at end of shift 

  • Perform daily, weekly, and monthly cleaning tasks 

  • Ensure equipment is handled with care and kept clean 

  • Assisting with bakery functions as needed 

The physical requirements include being able to:  

  • Lift and carry up to 50 pounds consistently, continuously and up/down stairs 

  • Stand for eight-plus hours each day 

  • Bend at the waist and use one’s wrists continuously throughout an 8 hour shift. 

  • Reach over the shoulders many times per day. 

  • Withstand continuous use of the wrists and consistent repetitive motion 

  • Walk around our facility 

Work Schedule: 

  • Full and/or Part Time 

  • Weekend availability is a must 

Pay Rate: $12.25 or Based on Experience
